Synopsis

The Caquetá cheese chain is undergoing a process of business growth that seeks to promote the organizational development of cheese factories and improve the well-being of cattle ranchers in Caquetá. The improvement of processes allows for better results and higher profits through greater optimization of resources. This project seeks to determine and analyze the logistics variables of the cheese sector in formal companies in the municipality of El Paujil, Caquetá, which impact the stages of preparation, packaging, cold chain management, and local transportation, through the analysis of the internal processes of the producing companies in the sector. The methodological approach consists of conducting interviews with cheese-producing entrepreneurs in the municipality in order to collect the necessary data to identify the status of the main logistics variables. Based on this information, the methodology of design of experiments (DOE) is used to determine the impact of each variable within the logistics process. Finally, a proposal for preventive and corrective improvements to the logistics process of the Caquetá cheese sector is developed, adjusted to the needs of the market and the reality of the region. The results of this research are presented through the writing and submission of a peer-reviewed article highlighting the main findings of the project.
