Synopsis

The advancement of the sustainable development goals SDGs in relation to inequality and poverty, the increase in food and nutritional sovereignty and security, the reduction of environmental impact and the concern derived from the climate crisis as a result of the economic practices present in daily coffee growing, are issues that are still to be resolved. To analyze the trends and challenges of sustainability in the coffee supply chain - hereinafter CSC, for these reasons, factors in social and environmental terms must be involved, and their impact on the exercise of governance and optimal strategic, tactical and operational decision-making. Chapter 1 of this book addresses the context and approach to sustainability in the coffee supply chain (Coffea), in Chapter 2 the current problems and challenges in the coffee chain and in Chapter 3 the challenges of competitiveness. Under these premises, it is considered essential to take into account in economic terms the supply and demand of the product, availability of raw materials and by-products, the technological level, the degree of agro-industrialization, the possible location of the manufacturing centers, the size of the facilities, logistics, means of transport, allocation and inventory and distribution centers, which subsequently allows to include in a significant way all these operations in the conclusions and recommendations for the coffee supply chain, among others. Chapter 4 presents in detail the bibliometric analysis in relation to the trends and promising characteristics for a sustainable, agile and viable coffee chain.

The use of by-products is immersed within the potential supply-demand opportunities at a global and national level for green, dry parchment and roasted coffee when it is of a special type, organic, with seals and certifications, conventional; and its presentations in grain and ground. Additionally, based on the bibliometric analysis, the most representative Top scientific articles are configured in the generation of new knowledge and that strengthen the network work, based on the promotion of research networks with international groups and the public dissemination of science that has been carried out through conference papers with the participation of coffee growers and academics in high-impact scientific events-trade fairs, which promote social appropriation and critical intersubjective rationalism.
Chapter 5 presents the results of the scientometric analysis on patents developed in the coffee chain. Consequently, it is deduced that methodologies for the identification of coffee production areas, tools for defining the population under study and the analysis of the CSC based on mathematical models are still scarce in the scientific literature, a field of research to be explored that manages to integrate social, environmental and economic aspects in the management of the Supply Chain.
Chapter 6 presents the state of the art for the optimization of the coffee production chain, Chapter 7 the digital transformation for an agile coffee supply chain, Chapter 8 delves into the research perspectives in the production and marketing of green coffee, plus alternative uses of by-products such as coffee grounds of the variety (Coffea Arabica).
For these reasons, this book addresses trends at a scientific level and the incorporation of cutting-edge technologies such as Artificial Intelligence (hereinafter AI), as well as the development of research that takes into account multi-objective analysis based on sustainability scenarios for a regional coffee context. Finally, Chapter 9 presents the trends in the viability and sustainability of the Coffee Supply Chain CSC: challenges and challenges from Industry 5.0.
