Synopsis

The purple passion fruit (Passiflora edulis Sims var. edulis) is considered an exotic fruit with remarkable sensory characteristics such as its purple color, fragrant odor and sweet and sour taste. The region of Anaime, located in the municipality of Cajamarca - Tolima, is characterized by its altitude and humid climate, favorable for the cultivation of this fruit. The objective of this study was to analyze the physicochemical characteristics and antioxidant activity of a fraction of the edible part of the purple passion fruit grown in the study area. The parameters moisture, water activity (aw), hydrogen potential (pH), total titratable acidity (ATT), electrical conductivity, total soluble solids (TSS - Brix), relative density, color, ash, minerals (Sodium, Zinc, Magnesium and Potassium), Total Phenols, Flavonoids and antioxidant activity by FRAP and ABTS methods, were evaluated in triplicate in samples collected from different crops located in La Florida farm, in the region of Anaime, Cajamarca municipality - Tolima.  The edible pulp fraction of the purple passion fruit showed significant differences in all the parameters evaluated, with average values of humidity (78.0 - 81.2 %), water activity (aw) (0.96 - 0.99), presenting an acid character, pH between (2.67 - 2.96), ATT between (3.13 - 5.59 %) of citric acid, electrical conductivity with ranges of (3.23 - 4.51) mS/cm, TSS (14.4 - 16.6 °Brix), it presents a relative density of (1.07 - 1.09 g/cm3), for color it reports a luminosity L*= (63.8 - 68.7), with a tendency towards red tones a*= (6.38 – 9.10) and yellow b*= (4.2 - 59.7), the hue angle (h) reports a minimum value of 78.6 and a maximum of 83.4) associated with intermediate maturation stages and changes from yellow-green to dark purple and an average chromaticity of (45.1 - 60.1), as for % of ashes it obtained (0.28 - 0, 66 %), with respect to the minerals evaluated it was obtained for Sodium (3.05 - 7.22), Zinc (11.4 - 17.7), Potassium (48.0 - 92.0) and Magnesium (16.1 - 24.6) mg/Kg, Total Phenols of (132.2 - 179.9) mg of gallic acid /100 g of sample, Flavonoids (1.85 - 4.18) mg of quercetin/100 g of sample.
